Truckee's Food Scene Introduces Kitchen Collab

Truckee’s local food scene has been expanding over the years. It’s an exciting time with new restaurants, bakeries, and pop-up events sprouting up all over town. And now, to add to that booming food scene, is Kitchen Collab — Truckee and North Tahoe’s first and only commercially certified commissary kitchen. Owner and director, Alex Tolger, started out by looking for ways to start a food truck, but realized that there was a larger issues at hand in the community: no rentable commercial kitchen space. Inspired by collaborative kitchens around the West Coast (like Kitchen Cru in Portland, OR, L.A. Prep in Los Angeles, La Cocina in San Fransisco, and Forage Kitchen in Oakland), the Kitchen Collab opened its doors.  

A collaborative kitchen works like a collaborative workspace, i.e. it is “a collaborative kitchen space and culinary incubator available for rent to caterers, private chefs, food production companies, food trucks, food educators, and health professionals,” as Tolger explains. Though the space regularly hosts events, it is not a restaurant. Rather, it is “a service for local food business, an incubator for the growth of our local food economy and event space for public and private events.”

Truckee’s most admirable quality, besides the incredible accessibility of the Sierra Nevada, is the community. There’s this sense that everyone comes together here in Truckee, to create art, to support each other, or to grab a beer at Alibi, because we’re all so passionate about the area. We love seeing businesses sprout up that assist this golden asset of Truckee life. In fact, Tolger’s favorite aspect of running this business in Truckee is just that. “A strong community involvement, a sense of growing impact on the local economy, and the energy of town trying to balance its history and growth to the future.”

What is your favorite outdoor activity in Truckee/Tahoe?

For me, I'm a winter time skier, usually Alpine if not in the Backcountry and summertime trail runner, really anywhere my feet will lead me.

 

Where is your go-to place when you need to relax?

As much as I love it up here, once in a while to recharge I need to get off the mountains and head to the city usually Portland, OR or the Bay. Luckily in the summer the number of places to recharge locally are endless as well, Page Meadows and the PCT from Old 40 to Squaw are great escapes.

 

Where is your favorite spot to grab a cocktail or bite to eat?

I live in TC so to have The Pioneer Cocktail Club is a great addition to what's been available before. Here in Truckee, I'm often at Drunken Monkey, The Tavern, Alibi, and Old Town Tap.

Truckee is growing so quickly! What are you most excited about in this new development?

Transitioning into a broader economic community, not just reliant on our history of resource extraction and transportation or tourism. The shoulders are shrinking!
